Nature seems to take our breath away. Whether it is the sight of the Adirondack Mountains from the summit of Dix or the sunset over the Chesapeake Bay from Thomas Point, the beauty of nature takes our breath away. Even New York City native urbanites take pride and find pleasure from the nature in Central Park. Yet in our fast-paced, technology infused, world, we find it difficult to secure time away from the 9-5 to explore and admire the natural world around us. If only there was a way to combine the beauty of nature with the constant callings of our rushed city lives…

In a city, such as NYC or DC, there are many “dead” spaces, such as concrete roofs and walls of buildings, that provide nothing but support for the building. Here, we present to you a symbiotic relationship between city and nature. Green roofs and green walls are becoming more and more popular with environmental activists and businesses looking to reduce long-term costs and improve the environment around them.

In a nutshell they are the product of taking inanimate flat surfaces and turning them into living, breathing, pieces of art that benefit the environment and society. They are soil based structures that can contain many different species of plants, depending on what your ultimate goal is. Most green roofs are made up of very resistant plants that do no require much attention. These plants are most often Sedum, which are small, brightly colored flowers that attract butterflies and and honey bees (oh how important!!)  as well as being drought resistant and low maintenance [1]. But don’t let that hold you back. Depending on the resources you have at your disposal, there are intensive green roofs that can contain a high variety of plants even including medium to large trees!

Not only are green roofs and walls aesthetically pleasing, but they contain many environmental, economic, and social benefits. The below list of benefits is paraphrased from page 2 of the Green Roof Toolkit put together by the Anacostia Watershed Society (AWS).

Environmental:

– Creation of wildlife habitat
– Reduction of storm water runoff into watershed areas
– Reduction of urban temperatures in hot weather
– Improvement of the air quality

Social:

– Creation of desirable green space
– Provide an aesthetic appeal to urban landscapes
– Provide more space for growing food
– Educational space to teach young children about the environment

Economic:

– Provides sound insulation for the building
– Monetary credits for storm water impact
– Increase of property values
– Decrease in energy costs
– Reduction of waste and landfill usage
– Increases the life of the roof

Wow! Such benefits! Would you believe me if I told you that not only do you and your city get to reap all of these benefits, but some cities such as DC are offering subsidies to help with the costs of green roof construction! The District Department of the Environment (DDOE) is currently offering a green roof rebate program that will pay $7-10 per square foot to

incentivize people to invest in green roofs [3]. Even better is that the Anacostia Watershed Society is working in tandem with the DDOE to increase the subsidy to $15-20 per square foot!

Green walls are not only for the individual household. They can also be great ways to advertise and market your company or product! As you can see on the right, PNC headquarters in Pittsburgh has taken the concept to a beautiful level with the green wall on their building. This green wall, the largest in North America, is 2,380 square feet with over 14,000 living plants! [4]

Nature is a beautiful thing LGBG followers. So, with the mounds of benefits and the lovely aesthetics of nature in our concrete jungles, let’s work as one to push for green roofing and walls throughout our country!

flags-ukraine-eu-russia-conflict-european-union-35666814A greener Europe can Undermine an ambitious Russia.  As the world watches the situation in Ukraine unfold with trepidation, the pageantry of the Olympics seems a world and a life time away (despite only being less than five hundred miles and several weeks apart). The conflict in Ukraine is playing out as a determination of spheres of influences; the EU and the United States seek to bring Ukraine into the western sphere of influence and Russia sees Ukraine as naturally being part of their influence. As such, both the EU and Russia offered Ukraine bailout deals, with the favoring of the Russian deal being the catalyst for the revolution. As of March 2nd, the crisis developing in Ukraine has led to the G-7 members pulling out of the G-8 summit, which is to take place in Sochi, in June. [1] However, some members were originally reluctant to go so far, with Canada and the U.S. leading the charge for the summit withdrawal. As of the moment that I am writing this, the US is bluntly stating that it will be moving forward with sanctions as a near certainty, while EU countries are scheduling a meeting for Thursday to consider targeted measures against Russia. [2] Where Russian resolves seems solid, Western resolves seems to be fractures by the Atlantic. What is the cause of this divide amongst G-7 and mostly NATO members? The divide is the bridge between the two spheres of influence: money and energy; the fossil fuels that Russia supplies Europe with and the desperately needed money Russia receives. This is a bridge that Europe has been seeking to dismantle and must is they want to truly counter Russian expansion of their sphere of influence.

As it stands here are the important notes the public needs to know to move the discussion forward.

  • Gazprom, which the Russian govt. has a 50.1% majority stake in, is the largest extractor of natural gas in the world. It produces over 80% of all Russian natural gas, accounting for 8% of Russian GDP in 2011.[3]
  • On three separate occasions Gazprom has stopped delivery of gas over payment disputes, twice with Ukraine and once with Belarus.
  • The deal deposed Pres. Yanukovich agreed to with Russia slashed natural gas prices by a third. Taken into account with the previous delivery disputes it is evident that Russia is willing to use natural to buy/demand political loyalty.
  • The E.U. is the largest energy market in the world. Currently, the EU imports approximately 65% of its energy; Russia being the largest exporter to the EU, providing 22% of EU imports.[4]
  • The Russian economy is slowing down; Growth, which was 5.1% in 2011, slowed to near 1% in 2013, and with projected growth remaining below 2% till 2016 at least. [5]

As Russia seeks to project itself back into prominence, while undermining democratic governments abroad, and squelching human right at home, the E.U. must, and has the ability to,  sweep the rug out from under them. Europe must stand united against Russia in this and show them that gas and oil are not solid ground to stand upon. Being dependent on autocratic regimes for energy needs undermines the liberal democratic foundations of the E.U. (as well as the United States).

What we end up having is a side track of dependency theory. Dependency theory has many different definitions depending on who is speaking about it, but a general definition is that, “[Dependency is]…an historical condition which shapes a certain structure of the world economy such that it favors some countries to the detriment of others and limits the development possibilities of the subordinate economics…a situation in which the economy of a certain group of countries is conditioned by the development and expansion of another economy, to which their own is subjected.”[6] However, we now have to take it a step further. The theory originally dealt with explaining the continued poverty of developing countries and showing how a dependency on industrialized nations, who would condition their economies to only export raw materials, led to this continued poverty. Now we are dealing with the conditioning of foreign policies. Energy independence and dependence carry a great deal of weight, particularly when a large portion of your energy import demands are met by a state-owned monopoly. Fear over secure gas and oil supply fills many nations with trepidations over the thought of outright challenging and responding to Russian aggression, as previously evidenced by the divide between reactions by the U.S./Canada and E.U. To be able to safely counter Russia’s anti-democratic policies Europe can no longer be dependent on Russia for their energy needs. As such, Europe needs to meet its energy demand with internal energy production.

Europe cannot fall back on its own gas production, as it has steadily been in decline. While liquid natural gas is another option, it is not truly available in the near-term. Europe does not have a properly integrated energy market nor does it have substantial LNG import capacity. Developing both would be a costly measure, with a long implementation deadline.[7]Where then is Europe to look? To the skies and the fields and to the progress it has made in the last decade.

The 2009 Renewable Directive set binding targets for all E.U. member states: the EU will reach a 20% share of energy from renewable sources by 2020 and a 10% share of renewable energy specifically in the transport sector.  By 2011 the E.U. was seeing 12.4% of its energy production come from renewable sources, with certain countries greatly outpacing the 20% target. The time has never been riper for Europe to determine a proper strategy to become more energy independent.  The E.U. is already ahead of its own schedule with regards to cutting carbon emissions; the goal set in 2007 was to get carbon emissions to 20% lower than 1990 levels by 2020. As of 2011 emissions were already 17.6% lower than the levels recorded in 1990.[8] What is required for Europe to strive forward is a bold plan, led by bold leadership. However, as the financial crisis has shown, no one is willing to carry this mantle. Instead, we find a divided Europe, with Germany being the practical leader, but refusing. Therefore, the key to any continent wide green energy plan that will lead to substantial change is Germany.

Such a forum is about to take place. In late January, the European Commission presented a framework for 2030. The intention of the framework is to seize upon the success of the 2020 targets and carry that momentum forward at a greater pace. As it stands, the framework aims to cut greenhouse emissions by 40% below the 1990 level by 2030 and to increase the share of renewable energy in EU consumption to 27%.[9] However, this framework was written in the shadow of a standing down in tensions in Ukraine. The situation in Ukraine and the virtual Russian annexation of Crimea have changed the relationship between Europe and Russia. How is Europe, particularly Germany, to respond in a proper manner when, “Russia is a major supplier of oil to Germany and the Netherlands in particular ‘and of natural gas to Western Europe generally’”?[10] The framework will be up for further debate at the spring meeting of the European Council. The differences in the situation from January to March are stark. The upcoming debate, which will likely not mean legislative action till 2015, is shadowed by the debate regarding green energy subsidies taking place in Germany; the ruling coalition is seeking to curve green energy subsidies.[11] However, Europe’s recent history should give the ruling coalition pause. As the Great Recession showed, regardless of where blame may actually lie, the health of the economy can slay even the most resolute government. As such, economic growth and security has taken precedence in many ways. This is not to say foreign policy has taken a backseat, as it is hard to dislodge from the forefront in a globalized world. The question Europe needs to be asking itself is: is it wise to have your economic footing being shored up by a country that is deliberately and consistently trying to undermine your liberal-democratic values in its own country and on your doorstep? How long will they allow you to stand in defiance, before they pull the rug to get you to bend a knee?

Over the past years, the Oscars and sustainability have proven to be an award-winning combination.  On Sunday, people globally will tune in to the 86th Academy Awards presentation to celebrate the best movies over the past year.  It is important to salute the Academy of Motion Picture Arts and Sciences (The Academy) for its commitment to “green” living.

It does not come as a surprise that the organization would have sustainability as part of its agenda considering that so many of its members are outspoken supporters of the green movement, and they often lend their faces and financial support to environmental, health and social concerns.  The popularity of many of these celebrities, including, but not limited to George Clooney, Angelina Jolie, Brad Pitt, Leonardo DiCaprio, Orlando Bloom and Selma Hayak, goes a long way to raise awareness of and garner support for environmental, health and social issues.

The commitment of the Academy to raise awareness of environmental issues and garner support through example also is noteworthy.  This effort begins with the selection of the Dolby Theater, formerly the Kodak Theater, as the venue for the annual event.   With this long-term agreement to be the home of the Oscars, Dolby is committed to environmental sustainability.

Global Green Oscar Week Kickoff

The Academy validated its commitment to sustainability with its annual kickoff by Global Green USA.  This year the celebration was “dedicated to rebuilding communities subject to environmental degradation.”  This organization now is the green event of Oscar week.  It seeks to raise “conscience” about energy conservation, and this year included celebrities speaking about driving to the Oscar celebration in hybrid cars.  This party featured a zero-waste plant-based dinner followed by a live auction that raised more than $20,000 to support its causes.

Second only to the actual awards ceremony, the highlight of Oscar night is the fashion displayed on the red carpet, and here some designers are featuring green dresses.  Perhaps the most notable is Red Carpet Green Dress, who is marking its fifth anniversary for this event.  This organization is the brainchild of Suzy Amis Cameron, wife of James Cameron, who, during press tours for Avatar (a Cameron film), sought to draw attention to the importance of sustainability in the fashion industry.  Mrs. Cameron notes that “[w]hile there are still great strides to be made, it’s important to point out that there are a greater number of sustainable resources available to designers today than there were five years ago.”[1]  This year’s Oscars Red Carpet will feature actress Olga Kurylenko wearing the design by this organization.  Olga’s accessories also are selected with concern for ethical consumerism.  Her limited edition vegan Red Carpet shoes are supplied as a result of a collaboration between PETA and Beyond Skin.

Meanwhile, on the men’s side, Kellan Lutz (Legend of Hercules) will be wearing the first sustainable tuxedo for Red Carpet Green Dress.  This tuxedo was designed by Jomnarn Dul for H Brothers and was constructed from recycled materials.

Dining with a Conscience

This year’s Governor’s Ball, the official dinner held following the award ceremony, will be created and officiated by Wolfgang Puck (celebrating 20 years in this role).  To the delight of the green movement, the theme will be the transcendent wonder of nature, with a display of lush vertical gardens under the stars that invite guests to mingle and celebrate nature.  The menu includes a prominent focus on vegan dishes.  All of the food will range from one-bite hors d’oeuvres to small-plate entrees.  Once again, these choices are indicative of the Academy’s concern and focus on the need to raise awareness of the environment and sustainability.[2]

The Academy Awards is one of the most popular events globally and is viewed by many people, thereby creating an excellent opportunity to raise awareness about green initiatives and sustainability.  We are proud to present background information on the efforts of the Academy to make a difference in the movement for sustainability.

Today is Valentine’s Day and we hope that each of you will celebrate green.  Many of you reading this post have not finalized your plans for Valentine’s Day celebrations.  Although some people procrastinate in making plans until the actual day, this year is different.  The severe weather occurrences with heavy snow and ice storms over most of the United States for the past week considerably hampered many people’s ability to get out and shop.  A lot of families are still snowed in with no power.  Additionally, gifts that were supposed to be delivered by mail may not come in time for the holiday.

The most important thing to remember is that Valentine’s day is about love, and materialism is not necessary to convey love.  While Valentine’s Day often is criticized as being a man-made holiday, it still is important to us as humans.  As we journey towards sustainable lifestyles, we learn that while investment in the environment is important, it is crucial that we include the investment in human lives as essential to achieving full sustainability.

The History of Valentine’s Day

In reality, this “lovely” holiday evolved from a very violent history.  Valentine’s Day is named after a Roman priest under Emperor Claudius II during the third century.  In this tumultuous era, the Roman Empire was divided into three competing states, with constant threats of invasion by one faction or another.  The survival of the Empire became so threatened that Claudius struggled to maintain war power.  Under the belief that unmarried soldiers fought better than their married counterparts, Claudius banned marriage among young people.  However, the priest Valentine, held high marriage as a God-given sacrament and began officiating these unions in secret.  He eventually was discovered, imprisoned and then beheaded.  Later Valentine was martyred by the Church for giving up his life to perform the sacrament.  Thus, Valentine’s Day is about love– love of God and love for each other.

Celebrate the spirit of Valentine’s Day.

The true spirit of Valentine’s Day should be reflected in our celebratory choices, and sustainability should be a driving concern in making these choices.  Why buy chocolate candies produced by workers who are underpaid and treated unfairly when we can purchase guaranteed fair trade products?  Why buy cut flowers that wilt and die in a matter of days when we can purchase potted plants and flowers that can be maintained in containers or  transplanted outside to thrive and be enjoyed for years to come?  Why spend long hours working to make money to buy “stuff” that creates clutter, especially when most families are starved for time together?

So as you ponder ways to celebrate Valentine’s Day, please be sure to remember that the day is about love and sustainability.  Celebrate a green Valentine’s Day.  To do so is to live green, be green.

Now that Super Bowl 2014 is over, it is time to do a sustainability assessment.  It is important to do this because the super bowl is the largest annual event held in America, and effort must be undertaken continuously to ensure that all aspects of this event are sustainable in terms of environmental and human impact.

Venue: MetLife Stadium

The NFL’s selection of MetLife Stadium in East Rutherford, New Jersey was appropriate in terms of the facility in and of itself.  MetLife Stadium is the home of the New York Giants and the New York Jets.  It is deemed “the greenest stadium in the US.”  This stadium was constructed on a parking lot between the old Giants stadium and Meadowlands Raceway.  The construction of MetLife Stadium had absolutely no impact on greenfield land or natural habitats.[1]  MetLife Stadium seats 82,000 people and has 13,000 parking spaces, each costing $150 a piece for Super Bowl 2014.

MetLife Stadium has excellent public transportation links (for normal Giants or Jets game day traffic), and a considerable percentage of football fans use public rail and bus networks to travel to and from the stadium on game days or to attend special events, i.e., concerts.

MetLife Stadium’s 82,000 seats are constructed from 80% recycled cast iron and 20% recycled plastic.  There are 2100 HD monitors throughout the facility with a sound system that boasts 2,500 speakers.

MetLife Stadium’s partnership with the Environmental Protection Agency successfully crafted a facility worthy of the designation as one of the most energy-efficient stadiums in the U.S.  MetLife Stadium also owns bragging rights to the first certified green restaurant in the world.  Some key green facts about MetLife Stadium are:

  • Water:  Reduced annual water consumption (in comparison to the old Giants stadium) by 25% with savings derived from low flow toilets and waterless urinals, synthetic turf and natural plants.
  • Power:  Its solar ring has produced 350,000 kilowatts of energy as of February 2013, and it uses 30% less energy by employing Energy Star equipment, automated lighting, efficient windows and biodegradable fuels with reusable fluids in outdoor transformers.
  • Construction materials.  Made from 80% recycled cast iron and 20% recycled plastic.
  • Reduced carbon footprint:  Since opening in 2009, MetLife Stadium has avoided 3,176,250 vehicle miles and reduced its carbon footprint by 268,828 metric tons of carbon dioxide.

Drawbacks and problems

MetLife Stadium is a state-of-the-art facility.  Perhaps its biggest drawback in terms of hosting an event of the magnitude of Super Bowl 2014 is its physical location.  The NFL dodged a bullet Sunday for the Super Bowl with clear, unseasonably warm weather for the game (temperature at game time was 49 degrees).  Bad weather did move in by the end of the game,  with rain, sleet, snow and icy roads making travel on Monday a horrific experience for many of the fans.  Many people found themselves stuck in the New York area as a large number of flights were cancelled.  Hopefully, the reality of climate change in planning huge events will become a major consideration of the NFL.

Secondly and perhaps most important, the location of Super Bowl 2014 in New Jersey with reliance on public transportation to move people proved to be an epic failure.  The public rails and buses were ill-equipped to deal with commuter demand.  Additionally, the high level of security warranted for an event of this magnitude severely hampered the flow of people into MetLife Stadium, even to the point of people collapsing from exhaustion during excessive wait times at Secaucus Junction.

Super bowls clearly are momentous events in the United States, and as such, the NFL must incorporate sustainability in the planning of this annual event.  To date, the NFL has proven that it can deliver an environmentally sustainable product in terms of facility or “stuff,” as witnessed by MetLife Stadium.  However, the human components of sustainability must be given equal consideration.  In its attempt to host the first mass transit Super Bowl, the NFL had a duty to thoroughly evaluate the human factors and to have contingency plans in place to avoid a transportation debacle.  Also, the NFL’s Fan Express pre-ticket coach bus program plan needs to be evaluated and fine tuned to flawlessly control people movement.

In conclusion, with all the hoopla about Super Bowl 2014, proponents of the green movement really would have appreciated it if the NFL had done more to showcase its efforts at sustainability.  With 111.5 million viewers tuned in, it would have been nice to see commercials highlighting the NFL’s commitment to commitment to green business and sustainability.  This really presented a teachable movement to younger viewers.

Now the NFL will go back to the drawing board and incorporate lessons learned from Super Bowl 2014 in its plans for future super bowls.  Hopefully, in its plans, green keywords, such as climate change, environmental impact, transportation, people moving, etc., will be central in the dialogue.  To ensure the sustainability of future super bowls is to live green, be green.

After a brief hiatus I’m happy to be back and cooking for the LGBG faithful. in the spirit of the holiday season, I’m proud to present this recipe created with the goal of sustainability. As we all know, and if my family is any indication, this time of the year awards us with a gluttonous amount of food, and more importantly leftovers. This recipe allows you to take your leftovers and efficiently transform them into a new and delicious meal. Side dishes such as peas, carrots, and corn are transformed into a great filling for the pot pie and affords you the ability to spend more time with the people who matter the most. So without further ado I present to you my recipe for leftover chicken pot pie.

Ingredients

  • 3 cups leftover chicken
  • Kosher salt
  • Freshly ground black pepper
  • 4 cups chicken stock, preferably homemade
  • 1 cup white wine of your choice
  • 2 chicken bouillon cubes
  • 12 tablespoons (1 1/2 sticks) unsalted butter
  • 2 cups yellow onions, chopped (2 onions)
  • 3/4 cup all-purpose flour
  • 1/4 half-and-half milk
  • 2 cups medium-diced carrots, blanched for 2 minutes
  • 1 (10-ounce) package frozen peas (2 cups)

For the pastry:

  • 3 cups all-purpose flour
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon baking powder
  • 1/2 cup vegetable shortening
  • 1/4 pound cold unsalted butter, diced
  • 1/2 to 2/3 cup ice water
  • 1 egg beaten with 1 tablespoon water, for egg wash
  • Flaked sea salt and cracked black pepper

 

Directions

In a small saucepan, heat the chicken stock, white wine and dissolve the bouillon cubes in the mixture. In a large pot add the hot chicken stock and the flour and cook over low heat, stirring constantly, for 2 minutes. Simmer over low heat for 1 more minute, stirring, until thick. Add 2 teaspoons salt, 1/2 teaspoon pepper, and half-and-half. Add the cubed chicken, carrots, and peas.

For the pastry, mix the flour, salt, and baking powder in a bowl. Add the shortening and butter and mix quickly with your fingers until each piece is coated with flour. In a food processor pulse 10 times, or until the fat is the size of peas. With the motor running, add the ice water; process only enough to moisten the dough and have it just come together. Dump the dough out onto a floured board and knead quickly into a ball. Wrap the dough in plastic and allow it to rest in the refrigerator for 30 minutes.

Preheat the oven to 375 degrees F.

Divide the filling equally among 4 oven-proof bowls. Divide the dough into quarters and roll each piece into an 8-inch circle. Brush the outside edges of each bowl with the egg wash, then place the dough on top. Trim the circle to 1/2-inch larger than the top of the bowl. Crimp the dough to fold over the side, pressing it to make it stick. Brush the dough with egg wash and make 3 slits in the top. Sprinkle with sea salt and cracked pepper. Place on a baking sheet and bake for 1 hour, or until the top is golden brown.

Over the past few years, pumpkin beer has become a very popular selection during the autumn, and with it comes a growing movement of farm-to-keg brewing. Upon closer inspection of the combination of health benefits of eating pumpkin and drinking beer, it is safe to say that pumpkin beer and farm-to-keg brewing practices create a perfect green marriage.

A close look at the history of pumpkin beer reveals its use dates back to the American colonial period, largely due to the wide availability of pumpkin — a native plant — with its fermentable sugar. In addition to its popularity as a potent potable, pumpkin beer was considered a health tonic. During the 19th century, the popularity of pumpkin beer waned in response to the successful development of foreign trade, which fostered the availability of hops, herbs and barley in the United States. Pumpkin beer briefly made a minor comeback during the mid-1800s, however, principally as a flavoring agent for beer. Modern pumpkin beers usually focus on the spices associated with pumpkins, namely nutmeg and cloves.

Fast forward to the 21st century and the green movement, which focuses on plant-based diets as a source for nutrients, local family farming with crop diversity to protect the environment and support of local businesses with low-carbon footprint that support neighboring communities and reinvest in the community, and we see that farm to keg brews fit perfectly in this scenario. Additionally, we find that gourds, in general, and pumpkins, in particular, are very popular because of their nutritional benefits, which include, reducing the risk of cancer, enhancing moods with its tryptophan that produces serotonin, and boosting the immune system with its Vitamin C, just to name a few. When combined with beer, which offers major health benefits when consumed in moderation, such as increasing bone mineral density, reducing the occurrence of kidney stones and reducing the risk of cancer due to its antioxidants, we have formed a perfect union that should make the green movement proud.

The growing movement today reveals local breweries contracting with area farmers to purchase whole pumpkins, which they use to make pumpkin beer. This is more efficient and less costly than using the canned pumpkins, which previously served as the major source for the product. This definitely is a win-win situation for the farmers, breweries and consumers.

As we are approaching the annual celebration of Halloween, I thought it would be a good idea to talk about ways to make sure your festivities are fun, safe and green for both children and adults.

We remind you here of the importance of making sure any costumes you select are safe.  When selecting costumes and accessories, particularly masks, avoid products that contain lead.  Many of the products made in China contain toxic material, and the best way to avoid contamination is to purchase costumes made in America or to make costumes at home.  Face paint also is a concern as these products often contain lead and heavy metals that can be toxic and often cause allergic reactions.

If you are decorating at home, pay special attention to lighting.  Remember that tea lights placed in bags along paths are particularly dangerous to trick-or-treaters.  LED lights are a better choice.  Also, the autumn with its bounty of pumpkins presents a great opportunity to make natural decorations.   Combinations of carved pumpkins with scary faces, bales of hay and ghosts made with sheets make intriguing scenes for Halloween revelers, and the pumpkins and hay bales transition easily into Thanksgiving decorations.  Additionally, the pumpkins seeds can be saved and roasted for an enjoyable treat.

As you plan your evening of trick-or-treating, here are some ideas to take Halloween to the next level:

  • Have a family dinner before heading out.  This likely will discourage snacking on candy along the trick-or-treat route.
  • Reinforce the rule that all treats need to be inspected for safety by parents prior to consumption.
  • Consider trading candy for gifts, such as puzzles or Legos.
  • Take candy to work to get it out of the house.  Your fellow workers will enjoy it.

Finally, for a new idea this year, consider reverse trick-or-treating.  Give a treat to the houses you visit with your children.  Note that this treat has a twist.  Collect small fair trade gifts.  Possibilities include fair trade coffee divided into single serve units, individual chocolate bars, teabags, or decorator soaps made from natural ingredients.  Wrap these articles in Halloween decorations (made from recycled paper) and give the gifts with a note (see below) explaining the concept of reverse treat-or-treating:

The act of knocking on people’s doors on Halloween and giving each house a little fair trade, organic treat instead of taking the conventional stuff that isn’t fair trade to any of us.  We hope to see you at our door next year.[1]

In light of the many accounts we hear about random acts of kindness and paying it forward, imagine the good feeling you will spread among your friends and neighbors, not to mention the pride your children will feel, for using the opportunity to trick-or-treat to start a movement that empowers us all to live green, be green.

Cranberry Apple Stuffed Pork Chops

In the northeast we have had some spectacular weather over the past few weeks. I decided to take the opportunity and barbeque pork chops on the grill, with a slight twist using fresh locally sourced, and seasonal ingredients such as apples and cranberries.

Pork chops and applesauce are a well documented partnership like Bonnie and Clyde, Sonnie and Cher, and more recently the New York football Giants and losing. Yet by adding tangy cranberries and crunchy almonds to the already great flavor profiles of pork with apples, my interpretation of the dish adds some complexity but maintains the overall idea of the partnership. The dish’s reduced carbon footprint is not only good for the environment, but will also be a sure hit  as a main dish at your next dinner party.

Ingredients:

4 bone-out pork chops

1 organic apple

1/4 cup fresh cranberries

Handful of unsalted almonds

1 tablespoon unsalted butter

1/16 cup flour

1/4 cup cognac

1/2 teaspoon cinnamon

A dash of nutmeg

Salt and Pepper

Makes 4 servings

Preparation:

Step 1:

Slice, peel, and cut apple into small pieces.

Step 2:

Add cranberries and apples to a saute pan and cook on high heat. Juice will begin to come out of the fruit as you cook them. Once this happens, add the remaining ingredients and continue to cook on high heat for three to five minutes or until the apple gain a slightly brown coating.

Step 3:

Turn off heat, add unsalted almonds to cooked stuffing mixture, and let cool.

Step 4:

Create pocket for stuffing in pork chop by taking a butterfly approach, with the only difference being not cutting into the meat as deep, and leave about half an inch thickness of connective tissue to ensure the pocket does not collapse and maintains rigid enough to enclose the stuffing in the rear.

Step 5:

Season pork chop with salt, pepper, onion and garlic powders on both sides.

Step 6:

Add stuffing to to pork chops, and close with toothpicks towards the edge of the chop where the stuffing is inserted. Grill on barbeque by setting grill to high heat and grill on each side for a minute or until a nice char is achieved. Then reduce heat to medium and cook for about ten minutes on each side. *(The added thickness of the chop as a result of the stuffing will dictate a longer cooking time).*

Step 7:

Let cool, serve, and enjoy!

While I am not that enthusiastic about shopping (largely owing to my goal to save money and to reduce my “ownership of stuff”), when I do shop, I want to be able to find good buys that suit both my tastes and my price range or fair trade treasures.  This past week, I devoted some time to shopping for fair trade products with the intention of celebrating Fair Trade Month (an annual global event occurring in the month of October).

Being the creature of habit that I am, I initiated my shopping expedition on the Internet with a Google search of “fair trade” products.  I learned a lot here about fair trade in general.  Specifically, I discovered that there are several “fair trade organizations” whose labels certify its members as being in compliance with fair trade rules and standards.  These organizations include, but are not limited to:

Most of the products that I found were coffee, tea, handcrafts, sugar, bananas, honey, cotton, fresh fruit, chocolate, flowers and gold.  I also found some sports balls, particularly soccer balls; however, with my soccer children all being adults now, there was not anything there for me.  After poking around some more, I found some nice scarves.

Then needing a break, I visited my favorite local garden store, Homestead Gardens, where lo and behold, I was greeted by a beautiful display of fair trade roll-on bracelets by a company called Aid Through Trade.

Then I went to Target and found that several of the products they carry are certified green and fair trade.  I am confident that with more time, for visiting stores in my area, I will find many other fair trade products.

On my return to my computer, my search for “fair trade” products took a new and unexpected turn.   I branched out beyond the restrictions of sites operated by the major fair trade organizations, and instead, looked for products, particularly clothing, that I liked.  In each instance, while browsing the various online company catalogs, I also read the sections of the websites entitled “our story” or “our mission” and discovered many businesses, who may not carry the “fair trade certification” issued by the major fair trade organizations or federations, but who endorse sustainability, practice fair trade in their dealings with exporters who provide their materials and who promote conservation and clean energy initiatives.

The lesson learned here is that we definitely should support the certified fair trade organizations for the remarkable work that they perform and their efforts to ensure decent wages to exporters of so many of the products that we enjoy.   However, we also should support companies not listed on these sites under these “certified fair trade labels”  who also work hard to deliver quality products, treat their employees and their business partners fairly while investing in their local communities.  These companies often are under the radar of widespread advertisement, but they are the “fair trade treasures.”  I hope that each of you will get out this month and do a little shopping, paying visits to small businesses and boutiques in your neighborhoods to discover your own “fair trade treasures.”  To do so is to live green, be green.
